This cooking class series was created to strengthen your ability to improvise on a daily—creating flavor without a long grocery list of ingredients.

This class is about familiarizing yourself with the foundational ingredients and techniques that make it easy to improvise delicious food in a pinch. If you have flour, cornmeal and lard or butter you can cook along. Participants will receive an email with more information and suggested reading.

I will share passages and suggested reading to help build on what we start exploring in class. This class will not require you to purchase ingredients, we will focus our attention on making the most out of what you have on hand, and what you might consider keeping stocked in your pantry.

Class 1 will explore:

  • Dry goods, flours and meals (making flour or meal from various grains) 

  • Noodles, pasta, dumplings and dough

  • The beautiful world of beans and peas

  • Using preserved ingredients to create deep flavor

Cooking demos:

  • Homemade pastry noodles, flaky crust, and cornmeal dumplings

  • Creating a meal using pantry ingredients only
